A lunch less ordinary

Everyone has a go-to Ryvita topping. It might be cream cheese, maybe it’s marmite (me) or  cheese and pickle… but it wasn’t until I was challenged to come up with an exciting topping, that I realised I was in a Ryvita Rut. An RR.

And this is through no fault of Ryvita – on the contrary, their range is far more colourful and diverse than you might think – Pumpkin Seeds and Oats, Mediterranean Herbs, Sweet Onion and Apple and Cinnamon…

No. The blame for this rut lies entirely with me and I recently took a Ryvita vow to no longer be boring with my lunch.

Once I started thinking about all the various things I could do, it all got quite exciting – the possibilities are endless! But in the end I selected the Ryvita ‘with a hint of chilli’ and made a beetroot hummus with home made pickled cucumbers with poppy seeds. Yes I did. And it was mighty delicious.

There are two recipes for this topping – the hummus and the pickled cucumbers…

For the hummus:

I roughly used the below but feel free to add/reduce based on the taste and consistency you like.

5/6 small roasted beetroot (roast for around 30-40 mins until softened)
1 regular tin of chickpeas, drained and rinsed
2 large garlic cloves, roughly chopped
4 tbsp olive oil
1 tbsp tahini
Juice of 1 lemon
1 teasp cumin
Large pinch of salt
4 tbsp water
Parsley to serve

1. Blitz the chickpeas, lemon juice, garlic and oil.
2. Add everything else and blitz some more.
3. Serve and sprinkle parsley on top

I also wasn’t aware of all the various health benefits eating rye offers – and even though the Ryvita range is extensive, each crisp bread is actually baked with only a handful of natural ingredients and the base for each is very simple: water, salt and rye.
The nutritional benefits are great and many, but here are my three highlights from the VERY LONG LIST:

  1. High in essential vitamins: B vitamins thiamine and folic acid, as well as riboflavin, niacin, pantothenic acid and vitamin B6
  2. Rich in magnesium: helps to promote normal muscle function
  3. Rich in zinc: promotes healthy bones, hair, nails and skin

And then it was time to make the pickled cucumber…

Fresh pickled cucumber salad

2 cucumbers, halved length-ways, deseeded and sliced

Dressing:

50ml olive oil
50ml white wine vinegar
1 tbsp caster sugar
1 red chilli finely sliced to taste
1 tbsp poppy seeds

Leave the cucumber to marinade in the dressing for at lease one hour –
the longer the better!
