Avo & eggs breakfast pizza

 

I would like to crown this brekky King of Brekkys.

I can’t get enough of avocado at the moment, (I think I’m averaging at around 4 a week. Oops) and this is a really easy way to combine it with my another of my favourite brekky foods – eggs. Eggs eggs eggs.

This is what you need:

1. Flatbread/pocketless pitta or tortillas
2. Lemon
3. Avocado (ripe ripe ripe!)
4. Egg
5. Sea salt, pepper, chili flakes, cumin, cumin seed, extra virgin olive oil
Here’s what you do:

Toast your pita/tortilla until it’s nice and  crisp, mash your avocado and spread it all over the pita. Drizzle with lemon, olive oil and spices and then place your egg (cooked how you like) on top, serve and eat.

Fried eggs are great on this breakfast pizza, but I love a good poached egg – remember this poached egg trick?
That’s it – easy peasy. The perfect Sunday breakfast…
